Bouquet garni is a basic aromatic preparation called for over and over again in French cooking, including stocks, soups, and slow-cooking dishes. It is made of fresh herbs and vegetables, tied into a bundle using kitchen mesh and/or thread.
1 sprig of thyme
3-4 parsley stems
1 bay leaf
2-3 leek leaves and/or
1 celery stalk cut crosswise in half
Thoroughly rinse ingredients to remove any dirt.
Enclose the herbs in the leek leaves or celery.
Cut a piece of string long enough to tie the bouquet securely and leave a tail long enough to tie to the pot handle. This will make for a quick retreival when it is time to remove it.
