With Fly Fishing the Yemen hitting Netflix and other DVD rentals this week, this chutney which is called z’houng in Israel and is the equivalent of harissa in Tunisia was featured in the movie.  It’s  a spread used like butter in all sandwiches.  You can also use green chilies instead of  ones.  will keep in the refrigerator for about one month.   It is the middle east version of chimichurri sauce.

Ingredients:
  •  4 oz.mild fresh red chiles or bell peppers, seeded and cut into chunks
  • 4 oz. hot fresh red chiles, seeded and cut into chunks
  • 5 garlic cloves
  • 1 1/2 c. cilantro leaves
  • 1 1/2 c. Italian parsley leaves
  • 1 t. ground cumin
  • 1 t. salt
  • 1 t. freshly ground black pepper
  • Pinch ground cardamom
  • 2 T. extra virgin olive oil
Instructions:
  1. Put the chiles and garlic in a food processor and grind until coarse. Add the cilantro, parsley, cumin, salt, pepper, cardamom and olive oil and process until you have a lightly textured paste.
