My other favorite restaurant in Budapest is Gundel, 2 Állatkerti Út, Budapest 1146

+36 1 468 4040Founded by 1894 by Janos Gundel, this establishment has been called the best restaurant in Europe and some say the best in the world. Kulacs is more of a country twist with gypsy bands, etc.  For the recipe:

pheasant

1. Hang pheasant for 3 days.

2. Marinade for three days in:

– Red wine
– Bay leaves
– Mustard seed
– Cognac

3. Next you put the meat in the bowl, then add the following
on top:
– Quince
– Wild pear peels

4. Fry in oil/lard
