This is my new go-to breakfast. I have been making these overnight oats for years.   I recently read that Princess Diana’s personal chef made a daily breakfast for her with a similar recipe.   His recipe begins with a rather surprising instruction: steep rolled oats overnight in orange juice. The next morning, he then folds in Greek yogurt, raw honey “to
taste,” and lemon juice. Finally, he grates a honey crisp apple over the top and throws in some blueberries and walnuts, before presenting the dish in a glass cup.

Ingredients
1 cup Lifeway Kefir or homemade (see below)
½ cup fresh berries
½ cup uncooked old fashioned oats, can also use uncooked steel cut oats too
2 Tbsp chia seeds
honey, to taste

Directions
In a small tupper ware, add all ingredients, shake well and place in the refrigerator overnight.
Top with honey, if desired, before enjoying on the go!

Making Homemade Kefir

Making Kefir

Making kefir is extremely simple. You pour one teaspoon of kefir grains into a glass jar. Add one cup of milk to the jar.

Stir the ingredients together and cover the jar with a piece of cloth or glass lid. Don’t use a metal lid as this can cause a reaction in the kefir.

Let the concoction sit for approximately 24 hours. During this time fermentation happens. Scoop the grains out of the kefir and enjoy!

When making kefir, it’s best to go with whole fat milk. It can be cow’s milk, sheep’s milk, goat’s milk, or any other milk producing animal. You can attempt to use a lower milk fat percentage or even no fat milk to make kefir. You’ll notice if fermentation is being sluggish or not happening at all.  If fermentation isn’t taking place at all, you’ll have to discard the milk and try it again with milk which has a higher fat content.

Kefir grains is something you purchase once, and use forever. However, you must know how to keep them going.  When you finish making kefir, remove the grains and add them to another cup of milk. This will create a new batch of kefir every 24 hours.  If you don’t wish to make kefir this frequently, you can place the grains in milk and place them in the fridge.  When you’re ready to use them again, simply remove the milk with kefir grains from the fridge and allow them to warm up again.  Once warm, the fermentation process should start again.
