Cook 6 strips of bacon in cast iron skillet. Strain grease and use about 1/3 c. grease and 1/3 c. pear grapefruit vinegar oil shaken together. Put a large bunch of spinach on a plate with some slivers of foie gras and chunks of crumbled blue cheese. Warm the plate of spinach in the microwave for 40 seconds. Pour dressing over. Garnish with cashews and fried onions.
