Copycat Olive Garden Salad

    Copycat Olive Garden Salad Dressing
    Yield: 1½ cups dressing
    Ingredients
    • ¾ cup oil (vegetable/canola)
    • ¼ cup plus 2 Tbsp white vinegar
    • ¼ cup water
    • 2 tsp sugar
    • ½ tsp dried Italian seasoning
    • 1 tsp salt
    • 1 tsp pepper
    • ¼ tsp garlic powder
    • 1 teaspoon carrot, grated and finely chopped
    • 1 teaspoon red bell pepper, finely minced
    • 1 teaspoon McCormick lemon pepper
    • 1/2 teaspoon dried parsley flakes
    • 1/2 teaspoon onion powder
    • 2 teaspoons dry pectin
    • ½ Tbsp mayonnaise (not miracle whip)
    Instructions
    1. Combine all ingredients in a bowl. Whisk briskly so that there are no clumps of mayo. Keep refrigerated.

    For the salad:
    1 10 -ounce bag American salad blend
    1/4 red onion, thinly sliced
    4 small pickled peppers, such as pepperoncini
    1 small vine-ripened tomato, quartered
    2 tablespoons sliced black olives
    1/2 cup large croutons
    1 tablespoon grated parmesan cheese
