Poke

Beef prices reached an all time high of $22.19 average per pound in March of 2022. So time to eat more fish.  Poke’ is the easiest and best way to serve fresh fish.

We’re in Maui right now visiting our favorite Costco store and this poke selection in Maui is incredible! From garlic shrimp poke to fresh shoyu poke to spicy ahi poke and ahi wasabi poke the selections are soo fresh and so tasty! So wish this was available on the mainland!

Tuna Poke

Ingredients

  • 2 pounds fresh tuna steaks, cubed
  • 1/4 cup soy sauce
  • ¾ cup chopped green onions
  • 2 tablespoons sesame oil
  • 2 tablespoons finely chopped macadamia nuts
  • 1 tablespoon toasted sesame seeds
  • 1 tablespoon crushed red pepper/gocharu and finely chopped macadamia nuts (Optional)

Directions
Place tuna in a medium non-reactive bowl. Add soy sauce, green onions, sesame oil, sesame seeds, macadamia nuts, and red pepper flakes; mix well. Cover and refrigerate at least 2 hours before serving.  Can be topped with pickled onion or thinly sliced Maui onion.

Spicy Ahi Poke

  • 1 pound sushi-grade tuna, cut into 3/4-inch pieces
  • 1/2 cup thinly sliced scallions (green parts only)
  • 1/4 cup mayonnaise
  • 1/4 cup masago
  • 4 teaspoons sriracha
  • 1 teaspoon soy sauce
  • 1/2 teaspoon fine-grain sea salt, plus more to taste

This recipe also works well with crab (it’s especially popular with imitation crab) and with quick-poached scallops.

1 In a medium bowl, combine all the ingredients. Fold gently until
thoroughly mixed.

2 Serve immediately, or cover tightly and refrigerate for up to a day. If
you let the poke marinate, taste it again right before serving; you may
need to season it with a pinch more salt.
