Ingredients
- 2 English Cucumbers (these are the long, skinny cucumbers), skinned and slice, but you can also use other cucumbers as long as the quantity is about right.
- 1/2 yellow onion chopped fine (shredded is even better)
- 3 large garlic cloves pressed or shredded
- 3-4 tablespoons of 5% distilled white vinegar (according to taste)
- 1.5 cup of water
- 2 teaspoons of salt
- 7 tablespoons of sugar divided (see below)
- ground black pepper according to taste
- sweet paprika according to taste (not essential)
Preparation
Put the cucumbers, onion, garlic in a suitably large bowl.
Add the salt and mix the ingredients.
Add 3 tablespoons of sugar.
In a smaller bowl add the water, 4 tablespoons of sugar, 3 tablespoons of vinegar. Blend well
and add to bowl containing the cucumber mixture. Mix all the ingredients together.
Taste the cucumbers and the liquid. If you wish, add more salt, sugar, or vinegar until the taste suits you.
Add ground pepper and paprika on top (don’t mix these in).
The salad will taste better after a few hours in the fridge.
Note: Some people like to add sour cream to cucumber salad. You can simply try this by adding about a teaspoonful to an individual serving of salad.
