Take a baguette and slice thinly.  Arrange slices on a baking sheet in a single layer and drizzle with olive oil.  Sprinkle with coarse sea salt and herbs de Provence.  Preheat the oven to 350°F.  Set in the oven for about 10 minutes, turning once or twice, until lightly toasted on all sides. Spread the cubes on a tray to cool before using or freezing.

ALTERNATE VERSION:

 Take 20 slices of white country-style loaf bead and cut into 1/2″ squares.  Put in a deep pan over medium heat and then add 2 c. oil.   Fry in batches until golden brown  and lift to paper towel lined plates until dry.   A wok works best in which to fry.
