2 c. Greek Yogurt
2 T. olive oil (or lemon juice for a different flavor)
1 garlic clove, finely minced and then smashed with 1 T. French sea salt
1 small cucumber, seeded and diced into small chunks
1 T dried mint crushed between your palms (or finely chopped fresh dill or fresh mint leaves, all add different flavors)

If Peel cucumber, then cut in half lengthwise and take a small spoon and scrape out seeds. Discard seeds. (If you use the small seedless or English cucumbers with few seeds, you can skip this step.)  Slice cucumbers and then finely chop.

Combine all ingredients and serve or refriderate.  Garnish with paprika.  Serve as a dip with pita bread, kofta or kebabs.
