Go catch yourself some fresh catfish, some blue cats for Flathead cats, not channel catfish.  Put equal parts of cornmeal and flour in a big zip lock bag.IMG_5330

Go out catch yourself some catfish and use the electric filet knife to skin yourself some freshly caught blue catfish, and then cut the filets into strips.

Put a handful of the strips into the bag and shake.  Pull out of bag and place into 375 degree Fahrenheit canola oil and fry until crispy brown, usually just a few minutes depending on the temperature of your oil, so keep a close eye on them to avoid burning.  Jimmy serves the seasonings on the side, so you can what you like from garlic powder, to Soul seasoning, Greek seasoning, Creole seasoning, cayenne pepper, black pepper and salt.  He also serves with homemade tartar sauce for dipping.
